Chestnut omelet
There are only a few sweet omelets, and chestnut omelet is one of them. It is the ideal dessert after lunch, but can also be consumed in and of itself as a main course.

  • 12 dkg of plain chestnut mass
  • 12 dkg of powdered sugar
  • 1 package of vanilla sugar
  • 2 eggs
  • 60 dkg of ground almonds
  • melted butter or margarine for baking
  • roughly chopped walnuts or hazelnuts for decoration
Mix the chestnuts with powdered sugar, vanilla sugar, and egg yolks. Beat the salted egg whites into a hard froth and carefully stir it into the chestnut mass. Fry the mix in some melted butter in a non-stick (Teflon) pan, and sprinkle it with some roughly chopped walnuts and hazelnuts before serving.
