Cream of chestnut soup
Cream of chestnut soup is the first and only sweet soup you will find among these recipes. Interestingly, salty soups are more prevalent among chestnut soups, even though chestnuts are generally consumed sweetened. Cinnamon and nutmeg add such a savory flavor to this soup that many will grow to love it in an instant!

  • 25 dkg of classic chestnut puree
  • 6 dl of milk
  • 4 dl of cream
  • 2 cl of rum
  • 1 pkg of vanilla cream powder
  • 4-5 pieces of whole cinnamon
  • peel of 1 lemon
  • 8 pieces of nutmegs
  • a bit of salt
Put the spices into a small dish, dilute them with 1 dl of water; boil the mix, then strain and cool it. After thawing, mash the chestnut puree and stir it into the cream. Mix the vanilla cream powder with milk, and stir it until the mixture becomes smooth. Pour all of the above into a blender, add rum and some salt, and blend them together. (If you do not have a blender, use a whisk.) Serve the soup cold in cups. Before serving, decorate it with whipped cream, sprinkled with cinnamon or grated chocolate.
